Bringing back dessert - the Parfait

Parfaits are such an easy and impressive dessert to throw together with hardly any preparation involved at all. I'm planning on making (tinned) peach, yoghurt and almond parfaits tonight for dessert but I'm going to have to leave it until the last minute for 'the fussy one' . She'll probably just have ice cream in a parfait glass.

Parfaits are just a matter of pureeing or chopping whatever fruit you have on hand and layering it with plain or flavoured whipped cream, custard, marscapone, ricotta, mousse, yoghurt, creme fraiche or other dairy product. Maybe adding a crunchy layer of crumbled biscuits, nuts, granola or crumbled cake and/or topping with a fruit syrup, more fresh fruit or nuts. You can make it full or low fat. You're only limited by your imagination. Here's a few other combinations to try.

Chocolate Oatmeal Parfait
Rice Pudding & Mango Parfait
Low Fat Honey Whipped Cream & Orange Parfait
GF Apple Pie Parfait

Low Sugar Double Blueberry Yoghurt Parfait
Coconut & Strawberry Parfait

  2. Hi my precious friend....Well I'm back from our incredible cruise to Alaska and have been exhausted!! Have to take a 'vacation' from my vacation (Big Smile). A wonderful couple from Austrailia sat at our dining table every night. Just lovely people. I think they were from Brisbane. I told them about you as my fabulous blogging friend!! You Aussies are all absolutely amazing!

    Have not even posted. But I have to do the wedding tables for a friend late this afternoon and have been SO busy with family etc etc that I haven't really had time. I hope to get to it this week!
